Chicken Wraps
Ingredients:
Chicken (small cubes) 100g
Roti/Flatbread/Pita Bread 2
Yogurt 2 tbsp
Ground red pepper 1/2 tsp
Vinegar 1 tsp
Salt acc. to taste
Parsley (finely chopped) 1 tsp
Garlic paste 1/8 tsp
Cabbage, lettuce leaves optional
Tomato ½
Oil 1 tbsp
Method:
In a bowl, add chicken, yogurt, salt, ground red pepper, parsley and vinegar. Give it a nice mix and let it be for some ten minutes. Then, heat oil in a pan and add the garlic paste and sauté it. Now add the marinated chicken and let it cook for about 3 to 5 minutes.
Heat roti/flatbread/pita bread on a hot plate and add the chicken filling. Now add sliced cabbage, tomato slices, and lettuce leaves. Roll it up and insert a toothpick to hold it together.
Potato Salad
Ingredients:
Boiled potato 1
Apple 1
Cream ½ cup
Boiled egg 1
Salt acc. to taste
Black pepper ¼ tsp
Sugar 1 tsp
Method:
Cut potato, apple and boiled egg into cubes. Now add cream, salt, black pepper, and sugar (you can also add cabbage). Mix well and let it sit in the fridge. Have it chilled.
Bran Muffins
Ingredients:
Bran : flour ¼ cup : ¾ cup
Coconut flour ¼ cup
Butter ½ cup
Eggs 3
Baking powder 2 tsp
Sugar 1 cup
Method:
Mix all dry ingredients together in a bowl. Then, take another bowl and mix butter and eggs (preferably use an electric beater). Now add the dry ingredients to the egg-butter mixture and with a spatula, mix it well. Pour the batter into a muffin tray and bake at 180oC in an already preheated oven for 15 minutes.
